What Dietary Health Marker Tests Are Possible?

If I wanted to do a before and after, when dramatically changing my
diet and lifestyle, what tests are possible? What would I call them?
Who would I go to for comprehensive testing? Or, would I just get
a nurse or doctor to collect fluid samples and send them to one or
more labs myself?

I read your question and i understand your concern. It would be really unnecessary to check for markers before and after the meal as its not a minutes job, it takes even hours to days for the body to show the difference. Consult your dietitian and let them help.
