Veg stir fry noodles is my favourite recipe. Cut tofu and fry tofu on medium heat for 5 minutes on both sides or until crispy. Remove and dry on paper towels. Then cook zucchini and squash faster is to first slice, then microwave in bowl with a little water for 4 minutes. Use same pan with whatever left over oil to cook your garlic on medium low heat. Then add your mushrooms and cook for 1 minute, add microwaved zucchini/squash, tofu, noodles, soy sauce, chili sauce, salt and pepper. Mix and stir gently for a few minutes so all the ingredients to absorb the sauce. Yum!!!
