Q: White Mucus in stool

I'm 32 about 10 lbs overweight and currently on the Atkins diet to make my wife happy. My daily diet consists of Egg white omelet with ham and cheddar cheese or poached egg whites for breakfast. For lunch I usually have a salad with ham, iceberg lettuce and pepperoni's and mozzarella cheese, or tuna with mayo and dill pickles and egg whites. For dinner it's usually the same or pork chops /steak/ or whatever the wife wants. I've also been eating a lot of the mozzarella stick cheese, about 5-6 a day. Really I don't see that my lactose diet is less than it was when I wasn't on the low carb diet as I drank a lot of milk and still ate a lot of cheese. I also take 2 multi vitamins and 3 aspirins a day.
Ok now that that is outta the way, I have noticed a lot of mucus in my stool. I mean a lot. No blood, nothing outta the norm as far as shape and size or frequency. I've always been a 2-3 day person. I drink plenty of fluids to help it as I've been told because of the diet.
The question that I have could it just be the cheese? Or maybe the extra fat that I'm eating and not digesting? I mean could it just be undigested cheese? I'm in the army and although I've mentioned it before to the doc a month ago, they don't really care if it doesn't pop up on a computer screen to guide them along the way. Starting to kinda worry me as the last bowel movement I had a quite a bit of white (always white, not yellow or red), attached to it.

Sounds like constipation because you don't have enough fiber in your diet. Your body is probably producing excess mucus so you can pass the stool. Using a daily fiber drink will help. Rather than Atkins I'd eat a healthy diet that includes a range of healthy foods...mabe just smaller portions. Good luck!
