Q: Vegetarian recipes

Where I live, tomatoes are about to come into harvest...so here's a great sauce recipe:

2 Tbsp olive oil
2 onions, chopped
3 cloves garlic, chopped
1 1/4 cup zucchini, sliced
1 8 oz can tomato sauce
1 6 oz can tomato paste
2 medium tomatoes, chopped
1 Tbsp oregano, dried
1 Tbsp basil, dried
(other veggies as you like)

1. Heat the oil over a medium skillet. Sauté the onions, garlic, and zucchini in the olive oil for 5 minutes on medium heat. Or, if you're French, 15-20 minutes to caramelize.
2. Add the remaining ingredients and simmer covered for 45 minutes. Serve over the pasta of your choice.

Yield: 6 servings
