Something I'd like to add here is that symptoms should not be used as a diagnosis for HIV. If you feel that you have exposed yourself to HIV, have a test 3 months after your last unprotected episode for an accurate result.

No, HIV will not survive in KY jelly. The HIV structure is weak. Even if it remains active, its component parts may have broken down to the extent that it becomes unable to infect.
