So, basically, you should be a-ok with your man finishing inside of you if you are taking your birth control properly.

Hmm... Making charts, testing fluids, checking temperatures... Sounds like a lot of unnecessary work when you could just pop a pill every day, or slap on a patch every week. Im a sunday starter, I take ortho-lo, and my period likes to come on either a wednesday or thursday... It changes on me, but its not that big of a deal. You're probably ok. If it starts changing big time, like not coming, or being a week early or something like that, then you should probably switch pills/talk to your doctor.
