Q: What Did I Get Myself Into?

Tomorrow I had plans on cooking a gumbo and potato salad and inviting Jesse's dad. We try to have him come visit as much as possible. He loves to see the baby and it helps him get his mind off of Jesse's mom's passing. Well when we called to invite him he reminded us that tomorrow there's a mass at church in my mother-in-law's name. We completely forgot and it's my parents that got it dedicated to her. Anyway, so now I have to cook a gumbo b/c he said he was going to come eat and we have to go to church. That's my first obstacle, when will I find time b/c it has to be cooked by the time we get back from church, which means I have to have it cooked before 9 am before we leave. Then I call my sister-in-law to see if they want some b/c she wanted some last time I cooked that, but we ran out. Well when I called, two of my other sister-in-laws were at her house. One thing lead to another and the whole family's coming over for lunch tomorrow. My dad was giving me pointers on how to make a gumbo go a long way. Jesse has 6 siblings. there's 32 of us all together. Out of 32 about 20 are coming eat. HELP!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
My house is a mess. I made the potato salad just now to save time. It's late so I need to go to bed. I'll be up at 6 am cooking and cleaning. Never again!!!

Oh no! It should be fun though. Remember, the memories are what are important not necessarily the food Smile Just try to relax and enjoy it all.

awww, I know how you feel. I like to have company over for dinner, but in moderation LOL. Good luck, I hope all goes well.

lol is there any way you can get "take out" gumbo and just put it in a pot and viola!!! you "made" gumbo

It went well. I cooked the potato salad last night and I woke up at 6:30 and made the gumbo. It was delicious. I had just enough for everyone. They just left at 4 pm, so I missed my friend's daughter's 1st b-day party. I didn't think they'd stay this late. It was fun though.

I was cooking it anyway, but I was going to freeze what was left to eat later, since it takes a lot of time and effort to make one. My biggest fear was that I didn't have enough. I was also nervous that I didn't have enough time to clean, cook, and go to church. We managed though. We were only 15 minutes late for church.
