So I just got ortho-cyclen from my doctor, and I last had my period June 26th, ending on July 2nd. From what I read, there's the "sunday-start" and "day1 start". I'm assuming this means I have to wait til my next period to start taking the pill, correct?

Yes, that is correct. You can either start taking it on the first day of your next period (known as day 1 start) and you are protected immediately, or you can start on the Sunday after your period begins, in that case you have to wait 7 full days before you are protected.
