Q: Vinegar reacts with corrupt nutrients ?

Does anyone know if vinegar on your food can react with or corrupt the nutrients in it? For example, might it reduce the omega 3 content of oily fish? Just wondering because as it improves/changes taste it seems unlikely that it just sits on top of food without reacting with it at all.
