lol, my dad loves that stuff. i think it's really called chipped beef on toast. i don't know how to make it but i think sandra posted a recipe in another thread not too long ago, or you could google it.

sh*t on a shingle is what they call it in the army. at least, that's where my dad got it from. chipped beef on toast is the real name.

yeah my dad was a marine and that is where he got the name for it..
it is made with hamburger meat or something..

i made the meatloaf muffins last night for dinner and just had some of the leftovers for my lunch. i could eat those every day!

post more recipes, girls! i need some new ideas!

My .nonnie would make that. But with chicken. In .creole, it was .chicken .a.la king...(not sure on the spelling/grammer of it)

I've never had the beef, I'm sure it's just as good! lmao!

Yes! that's what my dad called it too...caca on a shingle.

And we tried .bridgets meatloaf in the muffin tin recipe a few nights ago, and it was VERY good!!

well I made it with my substitutions...
I used sliced potatoes instead of fries, cheese pasta bake sauce instead of cheese and mushroom soups, can of corn instead of mushrooms and added some shredded cheese on top (hey look the idea was still there lol)

and it was scrummy Laughing

atually we were really naughty and went back for seconds and cleared the lot up.

Teething Crackers
2 1/4 cups whole wheat flour
1/4 cup cornmeal
1/4 teaspoon salt
2 tablespoons granulated sugar
1 egg, beaten
3/4 cup milk (try a little less first)

Preheat oven to 325 degrees F.

In food processor or in large bowl, stir together the flour, cornmeal, salt and sugar. Add the egg and mix well. Blend in enough of the milk to form a dough that will hold together in a cohesive ball.

On a floured surface or pastry cloth, roll into a rectangle about 3/8 inch thick. With a sharp knife, cut the dough into 1 1/2 x 3-inch rectangles. Place them on a lightly greased or parchment-lined baking sheet. Prick each cracker 2 or 3 times with the tines of a fork. Bake for 60 to 70 minutes, or until the crackers are thoroughly dry. Cool on a rack. These crackers should be hard. If necessary, put them back in the oven for a few minutes.

Yields 10 to 15.

Light Sugar Cookies

3 tablespoons margarine -- softened
2/3 cup sugar
1 egg
1 tablespoon lemon juice
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
2 tablespoons sugar

Cream softened margarine; gradually add 2/3 cup sugar, beating at medium speed of an electric mixer until well blended. Add egg and lemon juice; beat well. Combine flour, baking soda, and nutmeg; gradually add to creamed mixture, beating well. Shape dough into 26 balls; roll in remaining 2 tablespoons sugar. Place 2 inches apart on ungreased cookie sheets, and pat each portion into a 2-inch circle. Bake at 375 deg for 9 minutes. Cool on wire racks. Yield: 26 cookies

.I'm a vegetarian (95% of the time), so most things coming from me will be meatless.

Black Bean Burritos
Makes 4 burritos

1 15-ounce can black beans, drained
1/4 cup salsa
1 cup cooked brown rice
4 flour tortillas
1 cup shredded leaf lettuce or spinach
1 tomato, diced
Combine the black beans, salsa, and rice in a saucepan and simmer gently for 3 minutes, stirring occasionally. Remove from heat, cover, and let sit for 5 minutes.

In an ungreased skillet, heat a tortilla until warm and soft, then spread a line of the bean mixture down the center. Top with lettuce, tomato, and more salsa, if desired. Roll the tortilla around the filling, then repeat with the remaining tortillas.

Bridget - I made your meatloaf muffins.... kinda.
lol you guys have probably noticed that I can't stick 100% to a recipe to save my life.
it part depends on what I have and what needs using...

so
I browned off the ground beef - added a little gravy granules.
mixed it in with a package of stuffing mix and a can of chopped tomatoes (instead of the eggs and water).
then couldn't find my muffin tray Rolling Eyes
so dug out my loaf tin and packed it all in there instead.
laid a few slices of streaky bacon on top and baked at gas 5 for 30 mins.

served with mashed potatoes (instant mash with a can of corn added and a knob of butter) and tomato gravy (can of chopped tomatoes, half can water and gray granules).

Yummmmmmmmmmmmmmy in mah tummmmmmmmmmmmmy

everything i've posted except the meatballs are all weight watchers friendly.

does it matter what kind of stove top? or is the sage the best to use? had to add one to ask also , its raw meat when you put it in the muffin tin mixed with the rest of the stuff ? or do u brown the meat first?

I used sage and onion stuffing mix.
I also browned the meat of first and addedd a little gravy granules.

Diane, I used the raw meat when I mixed everything together. And I suppose you could use any flavor you like for the stuffing. I didn't have any type of stuffing so I had to use plain ol' boring bread crumbs. I really want to try it with the stuffing tho.

i use the regular chicken stove top but you can use whatever kind you like or think would taste best. i mix everything together with the raw meat, which i hate because i can't stand touching raw ground beef.



i wish i had more recipes to post but we're in a rut lately and i haven't been making a lot of stuff that requires a recipe, just a lot of chicken, steak, and burgers.

OMG - I made my first ever biscuits Laughing
we had them with minced beef, gravy, veggies and mashed potato.

so yeah, I know of nothing like that in the english food vocab.

some people said they are like scones... I don't agree.

it's vaguely like a cross between deep pan pizza crust and dumplings.

I saw the easiest Chicken recipe in a magazine today

Smash up a cup of French Fried Onions (the kind you use to make Green bean casserole)
Beat an egg
Wet a chicken breast in the egg and coat with the onions and bake until done.

It looked great.
