Can anyone give me the actual amount of carbs in squash. Some sites list 10 per 1/2 cup and some list 4 per cup. Ive been eating one squash per day(not a big acorn squash but yellow squash size) and dunno if im getting enough since my only other carb intake is nuts. Thx

If you're eating yellow squash (the small, yellow ones), it's only like 4g per cup. Butternut, on the other hand, is like 13g per cup. Make sure you look up the exact kind you're eating.

On days that I have yellow squash I consume one per meal. One yellow squash cut up gives me about a cup, sometimes I can get 2 cups if it is a really big yellow squash. I've been shooting for about 2/3-1 cup of vegetable per meal.
I really like it shredded, sauteed in a little olive oil and put in an omelet with spinach. Yummy dinner.
I use fitday.Com to determine the carb, fat, protein content of what I am eating.

That does sound quite good actually, I grew to hate them because I was eating them plain with some garlic salt.
