It's unlikely that the bowl of ice cream is what sent you to the hospital; if that didn't, something else would have.
You did not mention what type of diabetes you have. Type 2 can be controlled by diet and exercise in many people.
Type 1 diabetes requires insulin in order to live. Without insulin, a person will starve to death (despite eating everything in the world) and they will go into dka (diabetic ketoacidosis).
I'm guessing you are talking about type 2 diabetes. You should see an endocrinologist about getting the best treatment. Typically, oral meds like metformin will help, but new medications like byetta (injected -- don't worry, needles are not painful) have shown great help in many people, including weight loss (if you need to lose weight).
Ketoacidosis is very rare in type 2 diabetes, so i'm not really able to tell from your post as to which kind of diabetes you have.
If you can't get enough control with your type 2 diabetes, insulin is the best route. It will let you eat what you want, when, but if you're overweight, you will have to restrict your food intake.
