Q: Recurring Sore Throat

My throat became sore about a month ago. It felt very dry just in the back and slightly irritated. The next day the soreness grew worse and I went to the doctors. I was tested for strep throat and the results were negative. The doc assumed it was a throat infection and gave me amoxicillin for 10 days. The antibiotics cured all symptoms and I was fine. Two days after the prescription was up my sore throat came back just as strong. The redness I noticed never went away but the pain and dryness did. I went back to the doctors and was tested for strep and mono. Both came back negative and I was put on amoxicillin for another 10 days. Again it cured my throat and I felt fine for another brief 10 days. The day after I was off the prescription ( yesterday) I could start to feel the beginnings of a sore throat. Today I dont have a sore throat but the muscle directly above my adams apple but below my chin ( if that makes sense) feels sore and makes me feel like I have to swallow harder. Lymph nodes were never swollen during any of this. There are no lumps anywhere. Skin has been slightly more sensitive than usual during this recurring sore throat which I suspect is unrelated.
I'm at a loss and ready to go back to the doctors but I wondered if anybody knew anything about this. It's starting to worry me. I never have prolonged health problems like this. If the antibiotics help then it must be bacterial right? Perhaps the amoxicillin is treating the symptoms but not killing the bacteria? Would a different antibiotic help? I have no known allergies, nonsmoker and dont drink and not sexually active
