However, it sounds to me like she has confidence issues. This happens to a lot of girls, worrying they won't do it right, you won't like it, you'll laugh, etc. Reassure her that you care about her and none of the above will happen. If she does end up doing it for you, and you want her to do it differently, tell her. In a very non-critical way. "doing it thisway woudl feel great", etc. It's a very personal issue and I have a lot of friends that have the same problems with doing it as your girlfriend.
If she genuinely doesn't want to then there's nothing you can really do. But whatever you do, don't fight with her over it anymore because that just probably makes her feel more pressure and anxiety about it. I'm assuming she's never done it before, she's probably scared of looking stupid. Just talk to her.
