I seem to have developed an allergy to some instant coffees and wonder if anyone else has experienced this. About 5 - 10 minutes after drinking some brands I start to cough - a real phlegmy, chesty cough which lasts 20 - 30 minutes. I have begun to keep a record of the brands that cause this. If anyone knows how they produce instant coffee I would be very interested to know the different treatments between brands.

If these coffees have any type of substitues or additives like roasted chicory, chick pea, cereal, fruits and vegetables. Then it's possible you're reacting to those.

With this list you have created, look at any common ingredient that isn't in the safe instant coffees. That's likely what's causing the problem.
