Q: Special Diet: I Need Help!!

For certain medical reasons, I am now on a restricted diet that only allows for me to eat raw fruits and vegetables, and fish or chicken for dinner. I can use lemon juice, vinegar, and olive oil in my cooking only. Does anyone have any meal ideas or advice, because I am really at a loss!

Baked skinless chicken cut up into a large salad. I like to use different kinds of lettuce, spinach all kinds of veges (carrots, peppers, even slices of apple). I love olive oil and vinegar. Can you use the flavored vinegars? This gives an additional kick. What about baked salmon or grilled shrimp. This is great in salads. Cantaloupes and honey dew and or melon cut into bites with added blueberries! Fresh pineapple juice is great while grilling salmon! Carrots, broccoli, celery and califlouwer are wonderful munchies. Bean sprouts and snow peas are good too! Not sure if this is what you were looking for. Just trying to help! Good luck to you and happy health!
