This sounds quick and easy

mediterranean chicken & rice bake
from campbell's kitchen

prep time: 10 min. - bake time: 50 min.




Mediteranean chicken and rice bake



ingredients:

1 can (14 oz.) swansonŽ chicken broth (1 3/4 cups)
1/4 cup chopped fresh parsley
1/4 cup sliced pitted ripe olives
1 tbsp. Lemon juice
1/4 tsp. Pepper
1 can (about 14 1/2 oz.) stewed tomatoes
1 1/4 cups uncooked regular long-grain white rice
6 boneless chicken breast halves
1/2 tsp. Garlic powder
paprika


directions:
mix broth, parsley, olives, lemon juice, pepper, tomatoes and rice in 3-qt. Shallow baking dish. Cover.
Bake at 375°f. For 20 min.
Top with chicken. Sprinkle with garlic powder and paprika.
Bake 30 min. Or until chicken and rice are done. Serves 6.

I make something like that-throw a bit of cheddar cheese on top at the end and broil it for a min or 2--yum!
