My dad was told he doesn't have a very serious case and can eat a little bit of gluten. He doesn't have to worry about soup having flour, etc. Are there different levels?

In my experience, research and humble opinion, the person who told him this was not clear on the most recent information available about Celiac Disease. Anyone who tests positive for this should adhere to a 100% strict gluten free diet for life. even crumbs will trigger an immune response which predisposes one to further intestinal damage and constant triggering of the auto immune system. this can lead to lymphoma, cancer of the GI tract, Lupus, MS, Osteoporosis and further complications down the road. i hate to second guess a medical professional, but the Celiac Disease society does not adhere to this advice. can he get a second opinion?
