Hey!! I tried the Enchilada recipe you gave me the link to and they were fan freakin tastic! Everyone loved them which is quite an accomplishment in my house.

glad you liked them! did you serve them to guests? we thought they were great but it seemed like a lot of work and we had so much filling left over that i don't think i'll make them again.

No, I would never try a new recipe on guests. I use my family as guinnea pigs and then serve it to others. LOL

I think the next time I make them I will use chicken instead of beef.

We have a food sealer and it comes in very handy when we have an over abundance of something. I'll probably freeze some for another time.

They were delicious. I had it again for lunch

they do reheat nicely. we had them another night for dinner and then lunch twice.

if i make them again i'm going to use flour tortillas, i'm not a big fan of the corn.

i'm not much of a cook and that was the most adventurous thing i've ever made. i was very proud of myself when i tasted how good they were!

I'm going to cook dinner for my dh some time this week. So, I'm going to go back through your posts to look for something pretty easy. He'll be shocked if it turns out good. (I think I've only cooked for him maybe twice in the last 5 years).

I'm so good you're here with all your domestic goddess..ness. Or else, this cooking adventure may otherwise have hospital results. (knock on wood) I'll let you know how it goes and if he's still kicking afterwards!

I used Burrito wraps, because I don't like corn tortillas either. I also didn't put them in oil. I wrapped a bunch up in a wet paper towel and nuked them for a minute so they were soft. I was trying to save fat/calories where I could. LOL

christy, if i can cook then you can too! just follow the directions and it'll be delish! there are some really easy recipes in a sticky in the babytalk forum.

cindy, now you're making me want to try them again with flour wraps... mmm...

Enchiladas are so tasty with the flour tortillas. DH used to only eat corn tortillas with his food, then I came along and now we rarely have corn tortillas. We're a flour family now.

Have you ever tried to cut the flour tortillas into wedges and fry them? I do that sometimes and sprinkle just a bit of powdered sugar on them. They are good to dip in pureed strawberries too, with ice cream. Mmm

i don't know what cindy did, but i cut out the water and did the beef in the crock pot with all the spices and beef broth and vinegar. then i replaced one can of chiles with a can of rotel tomatoes. i bought a can of enchilada sauce and poured some in the bottom of the pan and poured the rest over the enchiladas before adding the cheese.

i'm so hungry and this isn't helping.

Mmmm Enchiladas sound yummy. My Mom used to make an enchilada casserole soooo good! I'll get the recipe from her and post it, makes great leftovers too!

I browned the outside of the beef in a frying pan and then put the beef broth, water, vinegar in the crock pot on low for 8 hours.

I have no idea what rotel tomatos are and couldn't find them at the grocery store, but I used 1/2 can of diced tomatos with garlic and onions, and a can of chilis.
I wasn't sure which enchilada sauce to get, so I bought a can of red and a can of green and put 1/2 of each in the bottom and the other half on top.
I also used mexican cheese.

They were yummy! I noticed on the recipe that you can put how many servings in and it will adjust the recipe. I just wish I had noticed that prior to making them, cause it made a ton (way too much for 3 people).

oh man! i wish i'd seen that! actually i can't believe i never noticed that before, i use that site all the time.

rotel tomatoes are in with the canned tomatoes. they're just diced tomatoes with chiles. they're really spicy and great for mexican meals.
