I have been thinking about switching my birth control pills from Orthocept to Seasonale. Will changing my birth control be liking starting from the beginning or will it just continue the protection?

Switching from two different combined hormone pills- like you are- will continue your protection.

Your doc will tell you for sure, but you will probably start the new one right after the placebo week of the old one and your protection will continue.

I'm not exactly sure if it's the same for seasonale but I'm guessing it is.

Yea, i think the protection will continue. I just switched from Junel to Microgestin and my protection continued, and just like the previous poster stated you will probably just start the new bc after your placebo week. But yes, your doctor should confirm that with you!
