Q: swallowing difficulty and anxiety

I've been having a problem since June with swallowing food. Long story short:

The food feels like it'll get stuck if I don't drink something to get it down. I literally get nervous when putting a normal amount of food in my mouth. I always have to drink something to swallow.
My throat doesn't hurt, I don't have acid reflux, I've never actually choked but the food "went down by itself" a few times. It's a scary feeling.
I had a barium swallow and thyroid sono. Both negative.
I had an upper GI endo... Doctor says my esophagus closed due to nervousness so he couldn't get down there. I was given Symbicort, which didn't work. I also involuntarily chew fast.

I lost about 8 pounds back in August but I'm eating fine now... But there's still that nervousness when I eat and I have to turn my head a certain way to distract myself. It works but I don't want to do this for the rest of my life.

Help?
