background info: im 23, male, 5 8", 160 lbs (slightly overweight). i have a not-so-good diet and i have enjoyed cheap beer way too much in the month of December. On the first night of issue (read below) i had eaten two big hamburgers.
moving on...

So, christmas eve, i had a weird feeling in my foot, as if i could feel it vibrating or like something flowing through it.
same thing christmas day.
The following tuesday, my toe hurt a little. not horrible. i was able to work in the factory without problem.
the next day...i wake up (in the morning, not suddenly at night) and my foot is KILLING ME
2 days of horrible pain and i finally went to the ER.
Xray and blood test, they claim its gout.
give me steroids and pain pills and a food list. then send me home.
its been nearly 3 weeks and my pain has been coming and going since Wednesday.
I think going to work and walking around in boots for 7 hours made the pain worse, which would be a "duh" statement, i know.

my question... everything ive read says gout starts immediately. no "build up."
is it possible to have the pain slowly build up and then just peak one day?
it doesnt sound much like an "attack"
any thoughts?

Your experience is not the usual. The first sign is usually a severe attack which starts while sleeping, although others may have missed the precursors which you sensed. The severe attack often is not noticed until awakening in the morning. Your attack could very well be a warning that you have developed sleep apnea -- frequent periods during sleep in which you stop breathing for many seconds at a time. Here's the advice which you were not seeking -- get checked for sleep apnea, and follow the recommended treatment!
Leaving sleep apnea untreated greatly increases your risk for developing many serious, life-threatening diseases. Your gout, which arises from the reduction in oxygen during sleep, is an early warning.
