Q: Good veggie recipes

I was wondering if anyone had good vegetarian recipes they would like to share.

I am always looking for something new to try, if you have anything good list it here.

Indian cuisine is really veggie - friendly. I'll look for some recipes for everyone and share in a little while. But the ones I know from the top of my head are:

Saag (spinach with or without cheese)
Veggie biryani (rice dish)
Daal (lentils)

quick good microwave recipes
I have a lot of recipes...all fairly cheap, very goood, done in a micro.

Stuffed peppers come to mind.

These are the bell peppers but you can also use large not yet ripe tomatos.

You need the stuffing...

I use vege mince I've rehydrated in the liquid I've saved from the previous time I made it. This gravy is so good it may be illegal.

If you don't have it, rehydrate the mince with some kind of flavourful soup base or the water in which you steamed broccoli.

Clean out the peppers, so there's space in side, use vege cheese first then the mince then fresh cut up tomatos, then anything that you have left over. Could be a table spoon of peas, could be some macaroni noodles, anything. Stuffed the pepper, making sure to add more vege cheese and fresh tomatos, at the last, then into micro for 5 minutes at High.

Take out, pour off and out excess liquid to be saved for the next time, and you'll have more space to add more stuffing, ending with cheese, tomoto and thyme or something to make it look pretty.

Back in for two/three minutes...peppers should be a little puckered.

Take out, cool a little, then eat.

You can eat them as is, you can put them in a pita bread, whatever...it's really good.

And if you got lots of carrots inside, and tomato, and some spinach, you've got a real big 'vitamin' pill
