It could be because you overeat carbohydrates-either helathy options or not so healthy. That would include fruits, veg, cereals, confectionary, bakery,so
ft drinks and so on.The quantity is important.Maybe you don't feel full once you stopped eating meat and therefore eat more than before or the wrong food combinations so that you feel hungry and go on eating.
If you described the changes that you made in your eating and sent me a list of what you usually eat since then, then it would be possible to see what led to the weight gain and what can be done about it.

A plant-based diet is actually a great way of controlling weight, even losing it. High-fibre foods such as vegetables, fruits, cereals, whole grains (brown rice, oats, wholemeal bread and wholemeal pasta) and legumes (soya products, lentils, peanuts, peas, and all types of beans) tend to keep weight off and are extremely healthy. Add to this a small amount of nuts and seeds each day and you’re likely to stay fit, healthy and slim.
Agreed it's totally quantity. It can help you lose weight if you don't eat pure cards and too much of them.

It would be just because of the reason that you might be overeating as you would be finding new dishes or you might be having a lot of junk food stuff like veg burgers, pizzas or soft drinks have control over these and yes especially rice you will not gain weight don't worry about this....
