If no water or very little quantities are taken between meals, it is quite normal to drink even 2 litres after a large meal. On the other hand, it should not happen after every meal (three times daily). Increased quantity and frequency of urination might indicate that you might be experiencing diabetes insipidus. In diabetes insipidus the basic problem is the lack of urine concentration. Thus, the urination is more frequent and in bigger quantities, followed by increased thirst. However, the thirst in diabetes insipidus is throughout the whole day, and not only after meals. It might need more diagnostic procedures by an endocrinologist to determine if you suffer from diabetes insipidus.
Increased intake of water after meals dilutes the gastric acid, thus decreasing its potential to digest the food. Also, increased intake of water might lower your weight, due to increased excretion of toxic products and decreased capacity for bowel-blood transport of the nutrients.
