I've been on birth control for three years and consistently taken it. Had my period, then didn't start a new pack for a week after my period ended. Then had unprotected sex without ejaculation, but started the new pack immediately after sex. Should I take Plan B?

It depends on how much risk you are willing to take. If it is none, then yes, take Plan B now. If you are not trying to get pregnant, but it will not be a catastrophe if you do, take your chances.
