What is the cause of this constant burping? Could it be related to my diet or signify some other serious problem?

YOU WROTE:

"Current medical status: Over the past 4 months, I have started to burp constantly. This does not correlate with what or when I eat. It's all day long. I have no reflux symptoms and I have very regular bowel movements, daily. I became a vegan over a year and a half ago. Otherwise there are no changed in my diet. I have recently added fish to my diet, but no other animal products
Current medical treatment: I am scheduled to see a gastroenterologist in a few weeks"

Given the data you provided, it seems likely that you might be experiencing Helicobacter pylori gastritis, which is inflammation of the gastric mucosa provoked by bacteria. The gastroenterologist that you are about to see might want to do a regular physical examination, common blood tests (among which Anti-H.pylori antibodies should be included), a urea-exhaling test or H.pylori antigen in the stool to confirm or reject the possibility of this diagnosis. If confirmed, triple therapy might be given and the condition will probably be settled.
