Q: Baked Salmon Patties/Mixed Veggies Recipe

While watching the election returns last night, I played a little bit in the kitchen and came up with something VERY yummy (at least I think so).

I took a package of dry herb stuffing and mixed it up with one egg and two cans of salmon (drained). I made simple patties out of the mix and baked at 350 for about 30 mins. Waalaa, yummy salmon patties like my grandma used to make with one exception...they were baked instead of fried.

Then, I chopped up brocolli and carrots and put the veggies into a pot with 1/2 cup of water. I cut a lemon into four parts, squeezed the lemon juice onto the veggies and sprayed with light butter and seasoned with light salt. Cooked until tender.

Normally I cannot have anything citrus but using the lemon for flavor seemed to be OK with my stomach.

My yorkie, Timber, likes them, too and I read that salmon is good for their coat and skin, which is great because she has skin allergies and needs all the help she can get.

If you like salmon, you'll enjoy these patties.
